Featured roaster – FEBRUARY 2020

February brings about the exclusive feature roaster debut by Bureaux – a longtime coffee industry player, yet first time establishing themselves as a roaster in their own right.

They began life as Australia’s first shared coffee roastery helping some of Melbourne’s prominent cafes and small operators begin roasting for themselves. Having shown the ropes to those aspiring to create their own coffee over the past four years, the natural progression to roasting under their own banner seemed only fitting. So then came coffee by Bureaux.

The Bureaux team is led by Tim Williams, whose old stomping grounds reads like a who’s who of the global coffee industry, including the likes of Los Angeles based Intelligentsia Coffee and London’s Square Mile Coffee Roasters and Workshop Coffee.

And if that coffee clout doesn’t yet have you convinced, he’s also one of the brainchild(ren) behind the World AeroPress Championship! If you’ve been living under a rock, it’s a global competition in search of the world’s best cup of AeroPress coffee since 2008.

Can we all agree now that he might be a tad obsessed with coffee? Not a bad thing for us.

But he wouldn’t be able to pull it off without the extended Bureaux family, which includes Matt, Lucy, Leah, and Zev, who each bring unique attributes to the operation.

Their approach to sourcing coffee is one of simplicity, preferring to source un-fussy and straightforward coffees, shying away from novel, experimental, and ‘crazy’ fermentation techniques. They like to adopt the same approach to roasting and brewing too.

So what proudly sets them apart from other roasters? “We spend as much time helping other people learn to roast as we do on roasting our own coffee.” And considering the care and attention they’ve been known to give to their customers, we’re pretty confident that their own coffee is sure to blow your socks off!

Bureaux are spoiling our No-BS members this month, as it’s the first time they have shared their coffee creations with the public. Up until now, it has only been accessible to friends and family… So consider yourselves lucky to be part of their inner sanctum now, if you will 😉

Espresso drinkers

You’re tasting Simple Lines, their espresso blend. With coffees from Huehuetenango, Guatemala and Guji, Ethiopia – taste milk chocolate, hazelnut, and damson plum in this harmoniously balanced blend.

Explorers, treat your taste buds to their Wolichu Wachu; an espresso roasted washed coffee from Guji, Ethiopia. Taste tangelo, apricot, and summer fruits in this tantalising cup.

Filter Drinkers

You’re tasting their Gran Galope single origin; a washed coffee from Cauca, Colombia. Taste candied orange and milk chocolate sweetness.

Explorers, you’re also treated to their Danse Mormora single origin; a washed coffee from Guji, Ethiopia tasting of bergamot, stone fruit, and white sugar.
